  • 2 Eggs, beaten.
  • 1 small avocado peeled, pitted, and diced.
  • 1 red pepper seeded and diced.
  • ½ small red onion peeled and chopped.
  • ½ tomatoes deiced.
  • Fresh baby spinach leaves.
  • A handful of freshly cooked prawns.
  • 1 tsp. coconut oil.
  • 1-2 cloves garlic, peeled and minced.

A combination of the following fresh herbs washed and chopped: parsley, basil, sage, tarragon, dill or chives, Sea salt, and pepper to taste.


In a large wok, sauté the onion, bell pepper, and garlic in oil. When the onions are soft, add the eggs, prawns, avocado, tomato, and spinach, continue cooking on medium heat until eggs are cooked and scrambled, and then add herbs. Season if needed.

A recent study was conducted at the Rochester Center for Obesity, in America. It had some very interesting conclusions to make about the relationship between consuming eggs for breakfast and weight loss. In the study that was conducted, 2 groups of overweight people were taken. One group was provided with an egg-based breakfast (eggs). The other group was provided with a bagel-based breakfast. Care was taken, to ensure that both the breakfasts had the same amount of calories and protein levels.
